On the island of Mauritius in the Indian Ocean, recipes, ingredients and flavours from numerous cultures come together. It is dishes made from seemingly contradictory ingredients, powerfully spiced and full of surprises that inspired us to create Truffes Île Maurice.
Our head confectioner Ivo Jud combines the intense flavours in a new way in this fine chocolate creation: Aromatic muscovado sugar – an unrefined cane sugar – and vanilla from Madagascar envelop a delicate core of white ganache and a black caramel made from muscovado and sweet and sour tamarind with fine Chakra Noir 70%.
